倒入蛋汁前,要稍微再搅拌一下,避免泡菜葱花等料都沈在碗底。确认油温够热,倒入1小滴蛋汁,迅速变熟即为温度足够,接着倒入约1/5的蛋汁,开始不断起泡后从一边将蛋皮卷起。

蛋卷移到旁边后,记得要再用刚刚的纸巾涂抹一下,再加入约1/5的蛋液,出现大气泡后继续卷卷卷~

如此不断重复同样动作,抹油、搅拌蛋汁、加蛋汁、卷起,直到蛋汁用完。
